Arugula and cashew pesto

This arugula and cashew pesto (without pine nuts) ist super quick and easy to make. It’s great with pasta, as a dip or on bread.

Arugula (or rocket) is a leaf vegetable with a fresh and bitter flavor. We frequently use it in salads. But often we have leftovers – so what to do? That’s how I created this arugula pesto recipe. And it’s so amazing because it only takes 5 minutes to prepare!

Ingredients

You only need a few, simple ingredients for this arugula and cashew pesto:

  • Arugula (rocket): Of course! 🙂 It gives the pesto a savory and lightly spicy flavor.
  • Cashew nuts: As this recipe is without pine nuts, we’re using cashew nuts instead. They make the arugula pesto nice and creamy and are much more budget-friendly than pine nuts.
  • Parmesan cheese: Grated parmesan cheese is always great for pesto recipes.
  • Olive oil: Makes the pesto even creamier. I have used a little bit less olive oil than in similar recipes. Feel free to add some more if you want to.
  • Garlic: Great for an intense flavor.
  • Lemon juice: Contrasts the spicy flavor of the arugula leaves.

Instructions

The arugula pesto recipe is really easy to make (only takes 5 minutes!)

  • In a blender of food processor, combine the arugula, cashews, grated parmesan cheese, olive oil, garlic and lemon juice and blend until creamy.
  • Add salt to taste.
  • If needed, add some more water or olive oil until you reach the desired texture.

What to do with arugula pesto? The great thing is: This recipe is so versatile! Here’s a few ideas of how to serve it:

  • With pasta: The classic way to serve a pesto. Use wholegrain pasta to make it a bit more healthy. But you can also use zoodles or gnocchi!
  • As a dip: Great with fresh or roastes vegetables.
  • In a salad: Great as a kind of dressing or sauce to use in salad. Also great in pasta salad!
  • On pizza: Spread on pizza dough – so delicious!
  • On a sandwich: Slather is on sandwich, bread or toast.

Ingredients
  

  • 60 g arugula (rocket)
  • 30 g cashew nuts
  • 30 g parmesan cheese grated
  • 30 ml olive oil
  • 1 clove garlic
  • 1 tbsp lemon juice freshly squeezed
  • salt optional
  • water optional

Instructions
 

  • Wash and rougly chop the arugula.
  • In a food processor or blender, combine all the ingredients for the pesto.
  • Add salt to taste (if even necessary). Feel free to add some more water or olive oil for a creamier texture.
